For the filling: - 1/2 onion + a similar amount of leeks chopped - 4 cloves garlic - 5 shiitake mushrooms, chopped - 2 hands chopped spinach - two eggs well beaten - 100g soft cheese - 150 ml liquid cream - 100g cheddar cheese - 1 red suitable circular sliced (optional, for garnish) - Parmesan cheese - salt and pepper to taste
